This ‘Vitality’ event will be especially geared toward those who know how – yet have a difficult time with – eating healthy to maintain vitality. Steve will talk about the biochemistry mechanisms that affect the mind and body.

So – we decided to do a Dialog Dinner for an opportunity to discuss these concerns with you as a group while enjoying a dinner that will inspire you to cook during the holiday season. Join us, and we’ll discuss:

Managing your health during the Holiday Madness

How to deal with food choices, alcohol and family patterns
during the Thanksgiving-through-New-Year period
and
stay on track with personal goals.

The conversation will include:

· Minimizing the toxic effects of alcoholic beverages. Assisting your liver, preventing skin wrinkling and minimizing the morning-after hangover (Bonus: Steve will provide free samples of the ‘alcohol detox’ formula during dinner!)

· Psychological addiction to sweets and deserts (how to cut down carbohydrate cravings).

· The social dynamic (expectations and pressures from family and friends).
· Intermittent fasting strategies.  Bracketing holiday meals with low-carb choices.
· Managing food hypersensitivities with enzyme supplements.
· Enhancing and restoring sleep rhythms.
· Managing the SAD season (spectral enhancements of light, and vitamin D).

The menu for our 4-course vegetarian* meal will be a holiday extravaganza. I’ll twist recipes – turning them inside out, which will appear to be frivolous and elaborate to those who are savvy with the traditional American holiday fare.

Dinner includes tea and water, and each course will be matched with a small glass of wine (optional). Steve will provide free samples of Alcohol Detox formula.

Appetizer:

Pickle Salad
Finally, a potato salad that’ll have more pickles than potatoes, with a homemade mayonnaise.

Soup:

Pumpkin Pie-n nut Soup
And the flavors aaaaarrrre: cinnamon, clove, allspice, ginger
With: Coconut milk and toasted pine nuts

Main course:

· Field Greens
Served with a dressing of: onions, pickles, egg, green olives, mayonnaise, ketchup and chili powder. … i.e. Thousand Island Dressing(!).

· Turkey Fig Quinoa Pilaf
Served with a ‘Turkish’ Beurre blanc (ghee champagne reduction sauce)

· Cornbread Stuffing
It’ll have more carrots, celery and onion than bread. I’ll offer a spritz of Black Truffle Oil to  those who need a mushroom-fix in their stuffing.

· Sweet Potato Mash
With – what other thaaaan – cranberries and maple syrup, and I won’t stop there… I’ll add toasted sesame seeds and oil, ginger and lemon.

Dessert:

Fruit Cake
You’ve probably already guessed it – that it’ll have more fruit than cake, a bit of rum and spices.

Good news! … for those of you in the Walnut Creek area… Steve and I will have Dialog Dinners at a home in Lafayette on Saturday, Sept 25th and Thursday, Oct 14th. My 4-course Middle Eastern-like vegetarian meal will highlight “Coconut Yogurt.” I’m looking forward to sharing with you the diversity of this somewhat-new product, I’ll use it in both sweet and savory dishes. It’s a great replacement for those who want to avoid meat and dairy products.
Appetizer:

Cucumbers in coconut yogurt with mint and cilantro chutney and spiced nuts

Soup:

Roasted beet, carrot and ginger soup in coconut yogurt

Main course:

· Roasted eggplant and tomatoes with garlic, onions and herbs, topped with coconut yogurt
· Brown rice pilaf with tempeh, orange peel and barberries (a tart and tangy berry, much like cranberries, but much smaller)
· Young greens with Indian Tikka Salad Dressing

Dessert:

Coconut yogurt lassie with a smidgen of cardamom

How thoughts, feelings, intuition and spirituality affect our health and well being. It’s not just about taking supplements and eating good food. We are what we think, we are what we feel, and we are what we believe. Being true to ourselves lessens the challenge of change: being able to resolve differences in thought and belief. The theme:  Fruit

Sooooo many fruits are available to us so I thought it would be apropos to accentuate it in our meal, plus, it goes well with the spirituality theme. Fruit has been used – I’m sure for eons – to enhance spiritual communication. I know for me it raises my vibration, yet, couldn’t think of why it raises our vibration. SO – I asked Steve the big ‘why’ question and he replied with these reasons…. it’s sugar content feeds the brain, it’s in abundance so people are able to contemplate during this time of reprieve from scarcity, and it’s alkalizing and thus anti-inflammatory.

Rest assured – I’ll balance each dish so that our blood sugar levels remain stable and those who want to remain in ketosis will be able to do so. I’ll use various fats and oil sources, from nuts, seeds and pressed oils such as hazelnut, walnut and pumpkin seed. Protein sources will be nuts, seeds, feta cheese, turkey, tofu, quinoa and beans. This is a vegetarian- and meat-lover menu. Most of the fruit will be raw, mixed with some cooked foods.
